Lazy Day Armagnac Chicken

Ingredients

  • 4 chicken leg quarters (or 8 thighs or drumsticks)
  • 1 1/2 cups Armagnac or other robust brandy
  • 1 cup chicken broth
  • 1/2 cup coconut amino acids (or substitute soy sauce)
  • 2 tablespoons honey
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a large skillet or pot, heat the olive oil over medium-high heat. Add the chicken pieces and cook until golden brown on all sides, about 8-10 minutes, turning occasionally.
  2. Remove the chicken from the pan and set aside. Reduce the heat to medium and add the butter, allowing it to melt. Stir in the minced garlic and thyme and sauté for about 1 minute until fragrant, then add the Armagnac, being cautious as it may ignite.
  3. Allow the alcohol to cook off for about 2 minutes, then add the chicken broth, coconut amino acids, honey, pepper, and cinnamon. Stir well and return the chicken to the pan, ensuring the pieces are covered in the liquid.
  4. Cover the pot and simmer on low heat for approximately 20 minutes until the chicken is cooked through and tender. Remove the chicken and keep it warm.
  5. For the sauce, mix the cornstarch and water together, then pour it into the pan. Stir to combine and simmer for about 5 minutes, until the sauce thickens and reduces. Return the chicken to the pan, ensuring it’s coated in the delicious sauce.
  6. Serve the chicken with your favorite sides, drizzled in the rich sauce. Enjoy this cozy, slow-cooked meal!
