- In a bowl, mix the flour, milk, 1 tablespoon of oil and a pinch of salt to form a soft dough.
- Knead the dough for a few minutes until it’s smooth and set aside for 10 minutes.
- In a separate bowl, mash the boiled potatoes. Add coriander, spices and 1/4 teaspoon of salt. Mix well.
- Divide the dough into small balls. Roll each ball into a thin circle of about 6 inches in diameter.
- Heat oil in a pan for deep frying. Test the oil by dropping a small piece of dough – it should sizzle and rise to the top.
- Place a spoonful of the potato mixture on one half of the circle. Fold the other half over it and press the edges to seal.
- Gently slide the samosas into the hot oil and fry until golden brown. Drain excess oil using kitchen towels.
- Serve hot with your favourite dip or chutney!
