Healthy Chocolate Souffle

Ingredients:
• 2 eggs, separated
• 1 tsp coconut oil
• 1 tsp honey
• 1 tbsp cocoa powder
• 1/2 tsp vanilla extract
• Pinch of sea salt
• 2 tbsp almond milk
• 1/4 cup dark chocolate chips

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Grease two 6-ounce ramekins with coconut oil and place them on a baking sheet.
3. In a microwave-safe bowl, melt the chocolate chips with the cocoa powder and honey for 30 seconds, stir until smooth.
4. Add the vanilla extract, egg yolks, and almond milk to the chocolate mixture and stir to combine.
5. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
6. Gently fold 1/4 cup of the egg whites into the chocolate mixture to lighten it, then gently fold in the remaining egg whites.
7. Pour the batter into the prepared ramekins, filling them almost to the top.
8. Bake for 12-14 minutes or until the souflés have risen and are set but still slightly jiggly in the center.
9. Serve immediately and enjoy!
