Ingredients:
– 500g extra lean minced pork
– 100g grated zucchini
– 1/4 cup chopped fresh parsley
– 2 cloves garlic, minced
– 1/2 cup chopped walnuts
– 1 egg, beaten
– 1 tbsp dijon mustard
– 1 tsp fennel seeds
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 tbsp olive oil
– 1/4 cup unsweetened almond milk
Instructions:
1. In a large bowl, mix all ingredients together except for the olive oil.
2. Shape the mixture into four patties or small sausages.
3. Heat the olive oil in a non-stick pan over medium heat. Cook the sausages for about 5 minutes on each side until golden and cooked through.
